Makes 2 mug cakes • Prep time: 5 minutes • Cook time: 1 to 2 minutes • Quick

Microwavable mug cakes are the absolute best things for dessert emergencies. They are quick and easy to make, use pantry staples, and are totally satisfying. A dollop of whipped cream or a scoop of vanilla ice cream on top certainly wouldn’t hurt, but these chocolaty cakes are perfectly rich and delicious on their own. Dessert emergency averted.

  • ¼ cup chocolate-hazelnut spread (such as Nutella)
  • 1 tablespoon granulated sugar
  • ¼ cup all-purpose flour
  • 2 teaspoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup semisweet chocolate chit

1.Melt the spread. Place the chocolate-hazelnut spread in a medium microwave-safe bowl and heat in the microwave for 20 seconds.

2.Make the batter. Add the flour, sugar, cocoa powder, baking powder, eggs, and vanilla to the bowl and mix well. Stir in the chocolate chips.

3.Bake the cake. Divide the batter between the two cooking vessels. Microwave on high until the cake rises and the middle sets, 1 to 2 minutes. Let stand for 1 to 2 minutes before serving.

Use two widemouthed canning jars instead.

If you don’t have chocolate-hazelnut spread, you can substitute another nut butter (peanut, almond, etc.). If so, reduce the amount to 3 tablespoons.
